On my head gasket which side is up for the gasket? Bumps up or down and what is the torque specs and sequence for heads?

You should have two dowel pins in the top of your cylinder which only allow the head gasget to be installed one way - bumps up.
See the attached picture for the torque values and torqe sequence.
