Can I pressurize the carbs on the bench? Im going to open them to see if they are dirty anyway but to eliminate 1 thing would be a start.

Yes. Block off the return line with a vacuum cap. Connect the regulator setup to the fuel inlet. With the covers off of the carbs but everything still installed spray WD-40 on the valves that pop off. Slowly add pressure until one of the carbs pops off. One might pop off sooner than the others but they should be close. If one pops off sooner hold that one down and check the others. As long as they all pop off at a similar pressure and it is around 16 psi you should be good.

Are you referring to the square covers on the outboard/back side?

Yes. The bottom left where the two Philip screws are is where it pops off.

Not much detail in the photo, but it appears that the middle plug is gray. That means the piston is probably coming apart. Try to get a more close-up picture and take a look inside with an inspection camera.

Dirty and dark. Piston is out and the rings are stuck on the exhaust side with lots of scoring. I was expecting the plug to lighter if it was lean. Just thinking until I get parts

The plug is coated with melted aluminum. That is why it looks like that.
