If you have the data log and home service app will the maptuner monitor and display knock readings?

Not directly. If you know what to look for you can see when viewing logs it in MLV

MaptunerX Datalogging and Monitoring for BRP vehicles equipped with Bosch ECU will view timing on each cylinder + requested timing.
You can easily see if timing retarding.

now would things like engine temp and intake temps pull timing as well? Causing it to show timing being pulled by all or just knock? As if being pulled by engine temp and iats that is the required timing?

Yes, timing can also be pulled by data from temp sensors. This will be shown when analyzing logs.

Is there any difference between what is logged with this new setup vs the old logger?

Still logging the same data but twice as fast, water resistant and a lot easier to use.
