Yes, do this mod especially since you have your transom off
Pros:: less cavitation = better hookup
cons:: you already have your transom off = NONE

I cannot report of how effective the mod is as I did it on a brand new GP since I had the pump off to change impellers before it got stuck on by running, and I added a R&D dual washer as well. What I can say about the mod is I was surprised, and somewhat disappointed in finding the plate was bored out to 160 mm almost all the way thru to the inside edge then rapidly tapered to the original diameter in the last 1/2" or so. I think the picture on GH or on Dean's site now will show that detail if you look closely. Was expecting a gradual taper from original diameter in front to the 160 mm at pump. Of course it may be done that way due to testing showing it was better, or maybe just because it is a simpler setup for boring.
Either way, it has to be much better than the stock setup with a sharp lip.

I had the one done by Dean for my GP. it hasn't made it to the water yet but I can say the machining is top notch. Update upon testing to follow...

Just tried ordering a new one(not sending mine in) from the greenhulk store. I was told that he was out until the beginning of March. Iim fine with waiting it out, still frozen where I am.
