Running fuel out of carb to store waverunner

I have been told by one mechanic I should just my fuel off and allow my waverunner to die so that there is no fuel in the carbs.

Is this a good idea? I figured it would then be hell to start it. I have put stable in the fuel and I plan to start my waverunner ever two weeks to keep the fuel from sitting in the carbs.

    What do you think ?

I pump my tank dry and put 5 gal of 100ll airplane fuel in for storage. It has no ethanol and will last for 5 years, that would be your best option if you can get it. Depending on your location you might be able to get non ethanol fuel in which case I would use that. I don't trust stabilizers and I would not run it with the fuel turned off as it might create a lean condition.
