Totally normal. Its steam and combustion gases, the initial stuff is unburned hydrocarbons as the engine heats up. Just like a car. Well, except for the water injection, of course.

If you're going to let it sit for extended periods, a trickle charger is recommended.

You definitely do NOT want to run that thing out...
You definitely do NOT want to run that thing out of water for more than 5-10 seconds. With a hose on it, I think its five minutes.
