The only way to know for sure if the EMM is faulty is to swap it with a known good one. Otherwise, it is speculation based on observations. Seems that the EMM is a prime suspect in this case.

Is the pump turning on? Ground the brown wire.

Often the Schrader valve core sits too low to get pressed down by the fuel gauge. You can remove the core for the test.

Seems your battery is not charging properly. I suspect that you may have an EMM issue. Take a look under the plastic cover side to see if you see anything like the image below.

Starting then immediately stalling is a classic symptom of an EMM needing repair. Do you have about 20VDC cranking, and does it briefly jump up to about 45V for a moment?

I am in the Binghamton area. I am thinking though that you may have an intermittent in the EMM. I can test the EMM to see if it is the cause of the "phantom" overheat condition.

Both are supposed to read about 1000 ohm (1K ohm) at room temperature. (what is the significance of your two readings for each sensor?) Seems both may be faulty.

A bad engine temperature sensor will definitely cause the CEL. If your measurement of ~2000 ohms is valid, then you for sure have a bad sensor.
